Chicken chow Mein (Slimming world friendly)

I recently found on You Tube a couple called Chin and Choo they are a Mother and son from Somerset who have three generations of experience in Chinese takeaways, Check out their videos they are brilliant you can see them here

I just thought with a few adjustments you could make some of their dishes Slimming World friendly, I bought their book and have made a few of the recipes they are delicious and easy too. I did ask permission to post this from Chin and he has said it was ok not wanting to get sued for copyright!!

Big thanks to Chin and Choo!!

Chicken chow mein

2 slabs dry egg noodles
1 white onion (sliced)
1 cooked chicken breast or leftover chicken (chopped)
1/2 bag fresh beansprouts
1/2 tsp salt
4 tbsp dark soy sauce
2 tbsp light soy sauce
low calorie spray oil

Cook the noodles according to the pack and rinse very well in cold water and set aside.

Place your wok over a high heat and spray with the spray oil, Add the onions and fry them for a few minutes until they start to soften and brown.

Add the chicken and fry for a few minutes until the chicken starts to brown then add the salt.

Add the noodles and leave them to sit for ten seconds then stir everything together and let it sit for 20-30 seconds and repeat this for a few minutes.

Once noodles have softened add the light and dark soy sauce and mix it all in together. When the sauces are well mixed in add the beansprouts and cook for another two minutes mixing everything together well.
