Slow cooker Italian pork (slimming world friendly)






This is such an easy after work dinner as you just pop on the slow cooker before you go to work then come in and its almost done.

Once again I used the frozen soup base mix available in most large supermarkets , I get mine in  ASDA. It's such a time saver but if you can't get it just finely chop the vegetables yourself.

I have even been known to prep it the night before and put everything apart from the meat in there then just add the meat and turn it on as I go out the door in the morning.


Slow cooker Italian pork


750g diced lean pork
1/2 bag frozen soup mix (also called soffrito or finely chop a large carrot, onion and celery)
2 cloves garlic (crushed)
1 can chopped tomatoes
1/2 pint vegetable stock (from a cube is fine)
2 tsp dried oregano
salt and pepper


Place everything apart from the salt and pepper into the slow cooker and cook all day on low (about 8 hours).

When you get home take off the lid . Leave to bubble for half hour or so until reduced.  Season to taste with salt and pepper.
