Leek Bhajis in the air fryer

 



I love onion bhajis but had some leeks to use up and thought I'd try and make them with leeks instead of the onions and they worked really well. You get the oniony flavour but not so strong and cooking them in the air fryer makes them really crispy too. Of course if you don't have an air fryer you can cook them in the oven.  I make no claims for how authentic these are but they are very tasty. 

You really need to use gram (chickpea) flour it's quite widely available but I think you could possibly use plain flour at a pinch but I haven't tried it myself also if you don't have all the spices in stock you can use curry powder if that's what you have in. 

The weight of the leeks are approximate depending on the size of the leeks don't worry if it's a bit over or under it will still be ok. 


Leek Bhajis  


200g washed and thinly sliced leeks

100g gram flour (see above)

2 tsp ground cumin

2 tsp ground coriander

1 tsp turmeric

1 tsp chili powder (mild or hot as you prefer) 

2 tsp salt 

spray oil 


Mix the dry ingredients together then add to the leeks and mix very well, Slowly add some water a little at a time until the leeks are coated in a thick batter (be very gradual if you add too much water add a little more flour). 

Place tablespoons of the mixture on baking parchment (cut to fit your airfryer)  Spray with oil and cook in your airfryer for 15-20 minutes until brown and crispy. 


I found Tony Singh sauces in Home Bargain and the coriander and mint one goes beautifully with these bhajis.
