Boursin stuffed chicken


 


I have made this dish many times it's great quick after work dinner and it's so simple. Chicken can be boring but this makes it really delicious.  I served this with my homemade pepper sauce and for the recipe for that click  here

I also cooked some simple tenderstem broccoli and peas steamed over the new potatoes so doesn't take up much space on stovetop but to be honest if I have been busy just served it with chips and salad. 

If you don't like the garlic in boursin you can use philadelphia cream cheese either plain or in any of the varieties available.  I also know prosciutto can be expensive but picked mine up in home bargains for less than £2. 


Boursin stuffed chicken


2 chicken breasts (or however many you are cooking for)

1 pack prosciutto ham 

2 tbsp boursin

spray oil


Cut each chicken breast lengthways but don't cut all the way through then open it up and place one tablespoon of boursin in the space and fold back over. 

Wrap a couple of pieces of prosciutto around each chicken breast and place in a baking dish sprayed with oil (or brushed with oil) 

Bake in the oven Gas 6/200/400 for ten minutes then turn them over and cook for another 10-15 minutes until browned.
