Curried beef pilaff (slimming world friendly)
This is a great quick after work dinner, It's all cooked in one pan so not much washing up and only need a side salad to serve with it to get all your superfree vegetables. I used yellow and red peppers but feel free to use whatever you like, I also used mild curry powder as I'm a bit of a wuss with heat but you can use hot if you want or add a bit of tabasco afterwards (That's what my husband does he likes it hot!!)
Curried beef pilaff
1lb extra lean minced beef
1 large onion (peeled and chopped)
1 pint beef stock (from a cube is fine)
2 peppers (sliced)
2 tbsp curry powder (mild or hot)
8oz basmati rice
Fry the onion and minced beef together in a large deep frying pan for about 5-10 minutes until mince is brown and the onion is soft.
Add the curry powder and cook for another minute then add the rice and peppers and mix everything together very well.
Put a lid on the pan (if you don't have a lid cover tightly with foil) and place on a low heat for 15 minutes then remove lid and check. The rice should be cooked and the liquid absorbed. Season to taste with salt and pepper if you need to.
Serves 4 and free on extra easy
