Chicken enchiladas (Slimming World friendly)
This is not the prettiest picture I have ever posted but it was very tasty. I make no claims to the authenticity of this dish as changed a few things about to make it Slimming World friendly and I don't think you can tell the difference.
Making a dish like this at home means you can control how spicy it is , I think some people are put off trying Mexican style dishes as they think it will be too hot but you can make this with a mild chili powder and it still tastes delicious and of course if you like it hot then use the hot stuff!
It might seem a bit fiddly to make but it's really not just a bit of assembling and cooking in advance You can also make this with leftover cooked chicken or maybe turkey it would make a nice change to make this after Christmas.
Chicken Enchiladas
3 chicken breasts (diced)
1 red pepper (sliced)
1 yellow pepper (sliced)
1 large onion (sliced)
low calorie spray oil
1 can black beans (drained and rinsed)
350ml chicken stock (from a stockpot or cube is fine)
1 tbsp cornflour
1/2 - 1 tsp chili powder (mild or hot as you like)
1/2 tsp granulated garlic
1/2 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp salt
160g grated cheese
4 WW wraps (currently allowed as a healthy extra)
Spray a large deep frying pan or wok with the spray oil and over a medium heat cook the chicken until starting to brown then add the peppers and onion , sprinkle with salt and pepper and cook until the chicken is cooked through and the vegetables have started to soften then set to one side.
Mix the stock, chili powder, garlic, oregano, cumin and salt in a pan and whisk well, Mix the cornflour with a little water and whisk this in then place the pan on the heat and bring to the boil then reduce the heat and simmer for a few minutes until thickened and set aside.
Take a large rectangular casserole dish and spray lightly with the spray oil, Take the wraps and lay one on a chopping board and spread with a tablespoon or two of the sauce all over the surface. Place some of the chicken mixture and a spoonful of the black beans along the middle of the wrap then fold in the sides of the wrap then fold over the other sides so you have a parcel and place it in the casserole dish with the seam side down at one end of the casserole dish. Repeat with the other wraps till you have the four filled wraps in the dish.
Pour over the rest of the sauce evenly and sprinkle with the grated cheese.
Bake in a hot oven gas 6/200/400 for 20-30 minutes until browned.
Serves 4 very generously at less than 1/2 syn each if using the WW wraps and the cheese as your healthy extras.
