Creamy potato salad (Slimming World friendly)




I love potato salad in the Summer when you can make it as an easy side dish that keeps in the fridge for a couple of days great with lunch or dinner with cold meats or BBQ. Usually they are high in fat due to the mayonnaise but this recipe has a lot less fat but plenty of flavour.

It's important to use new potatoes for this as if you use large potatoes they tend to be more floury in texture and they turn to mash you need the waxy texture to hold the dressing. You can use large or small pickled gherkins as you chop them up it doesn't matter, I like the ones you get in Lidl best as the vinegar is seasoned well.


Creamy potato salad

1 kg bag baby new potatoes
200ml fat free Greek yogurt
2 tbsp very low fat mayonnaise
2 tbsp chopped pickled gherkins/cucumbers
2 tbsp gherkins vinegar (from the jar)
2 tbsp chopped chives
salt and pepper


Put the potatoes cut into chunks (or left whole if they are very small)  boil in plenty of salted water until just cooked. Drain well and place in a bowl.

In a jug place the yogurt, mayo, gherkins, gherkin vinegar and whisk together very well, Season with a tsp of salt and 1/2 tsp pepper and whisk again. Taste in case might need a little more salt if too thick add a little more vinegar.

Add the dressing while the potatoes are still warm (but not hot) scatter on the chopped chives.

Serves 4-6  at 1/2 syn per portion if serving 4 less if serving 6
