Lemon and thyme roast potatoes (Slimming World friendly)
I've been making these almost every Sunday since I first made them they are so tasty and easy. They are especially good with roast chicken. I first saw a similar recipe in a Sunday newspaper and just had to adjust a few things to make them SW friendly. I use Maris Piper or King Edward variety of potatoes as I think they make the best roasties. Give them a try :)
Lemon and thyme roast potatoes
1 kg potatoes (see above)
2 lemons (unwaxed)
3-5 sprigs fresh thyme (or 2 tsp dried if can't get fresh)
salt and pepper
low calorie spray oil
Wash the potatoes and cut them into even chunks no need to peel. Place in a pan of salted water and bring them to the boil then boil for five minutes and drain.
Place the potatoes in a large roasting tin spreading them out evenly, Spray well with the spray oil. Cut the lemons in half and squeeze the juice over the potatoes and throw the lemon halves in with the potatoes. Add the thyme , Take some off the stalks and leave some on or sprinkle evenly if using dried thyme.
Season well with lots of salt and pepper and mix them all together well.
Place in the oven gas 8/450/230 for about half an hour then take them out shake the tray and give them another good spray of oil, Put back in for another 15-30 minutes until browned and crispy.
