Chef secret meatballs (Slimming World friendly)
If you are wondering why these are called chef secret meatballs it comes from having them in a restaurant they were delicious and so asked the chef for his recipe and being told it was a secret but luckily my friends daughter worked there and managed to get the recipe from him and so now I'm sharing it with you.
They are simple to make and so tasty if you also want the recipe for the sauce I served them with please click here and I served them over spaghetti with a side salad for extra vegetables.
Chef secret meatballs
500g extra lean (5%) minced beef
1 red onion (finely chopped)
3 cloves garlic (crushed)
3 sprigs fresh thyme (chopped) or 2 tsp dried thyme
2 tsp salt
2 tsp freshly ground black pepper
1 tbsp Dijon mustard
low calorie spray oil
Simply place everything (apart from the spray oil) in a large bowl and mix well together, I find the best way to do this is to use your hands so you can really mix it well. This is a good job to give to children and its fun for them.
Take spoonfuls of the mixture and roll into balls, I usually make them about the size of a walnut so you can get about 24 out of this mix but of course make them bigger or smaller as you like.
Spray a roasting tin lined with foil with the spray oil and place the meatballs on it and spray again.
Heat the oven to Gas 6/200/400 and place the tray in for 30 minutes until browned.
They work out as 1 1/2 syns for the whole lot and I usually serve 6 per portion so 1/2 syn per portion.
