Sausage and potato hotpot
I made this the other day when I was thinking of a dish my Mum used to make called 'Poor mans goose' and although don't have the recipe for that I sort of made this one up from how I remember it.
It's a really tasty, filling and economical dish there were four of us children and she needed meals that were cheap and cheerful as she used to say.
I served it with carrots and spinach but you could put the vegetables into the hotpot if you wanted to make it a one pot meal.
Sausage and potato hotpot
8 good quality sausages (skins removed)
1 onion (sliced)
1 pack of sage and onion stuffing (made up as instructions)
4 large potatoes (cut into slices)
1/2 pint beef stock
salt and pepper
spray oil
Take a large ovenproof casserole dish, spray with oil and place over a medium heat, Add the sliced onions and fry until softened.
Remove the pan off the heat and place a layer of the sausage meat over the cooked onions, Add a layer of the made up stuffing , It doesn't have to be neat, Top with the sliced potato then pour over the beef stock.
Add some salt and pepper to the top of the dish and spray the top with a little more oil.
Bake in an oven at gas 6/200/400 for about 40 minutes until the top is golden brown and the potatoes are soft.
