One pot chicken and rice
This is a lovely one pot meal it feeds six generously and you don't even need anything with it but a salad or some broccoli would be good.
I don't make this very spicy but of course if you prefer add more chili, I also use chicken thighs as I prefer the flavour but if you only like breast that would be fine too. You could also add more vegetables like peas or sweetcorn if you wanted to increase the vegetables, It's a very forgiving dish.
One pot chicken and rice
1 kg boneless and skinless chicken cut into bitesize pieces
250g basmati rice
2 x tins chopped tomatoes
2 red peppers (sliced)
1 large onion (sliced)
2 cloves garlic (sliced)
500ml chicken stock
2 tsp chili powder
2 tsp cumin powder
2 tbsp tomato puree
1 tbsp vegetable oil
salt and pepper
Take a large ovenproof casserole and pour in the oil, Place over a medium heat and add the chicken , Season with salt and pepper and fry until browned then remove from the casserole and set aside. Next put in the onion and fry until softened and then add the peppers and garlic and continue to cook until the peppers are soft , If it starts to stick just add a little water.
Next add the chili and cumin and cook for a few minutes then put in the stock, tomatoes, tomato puree and rice and stir well. Put the chicken back in and bring to a simmer. Keep the heat on low to medium and put on the lid of the pan.
Leave for 30 minutes then stir gently most of the liquid should have been absorbed if it's not leave over a gentle heat for another ten minutes or so. Taste to see if you need any more salt and pepper.
Finally remove from the heat and leave to stand for a few minutes.
