Salsa chicken
This is probably the easiest dish I ever made, I had the idea of using a jar of salsa as a cooking sauce when I had nachos out one evening, I was thinking jars of salsa already have delicious flavours of garlic, chili and tomatoes in so no need to add anything else. You can also choose how spicy you like it by choosing a mild or hot salsa.
You can easily make this in a slow cooker too but would need to pop it under the grill to melt the cheese.
Salsa Chicken
4 chicken breasts (sliced in half)
1 jar of salsa (mild or hot as you like)
100g grated cheddar cheese
salt and pepper
Season the chicken with salt and pepper and place in an ovenproof dish, Pour over the jar of salsa. Bake in an oven heated to Gas6/200/400 for 30 minutes.
Remove from the oven and sprinkle over the cheese and put back in the oven until the cheese has melted or place under a hot grill.
