Cowboy caviar

 



I have seen this online a few times and when planning a BBQ recently thought would give it a try, It's barely a recipe just a bit of chopping and you just mix everything together and even better you should make it in advance a few hours before to let the flavours develop. 

You can customise it as you like it's very forgiving I have made it with just red kidney beans instead of mixed beans, I sometimes vary which dressing I use on it. You could even add tuna and some cold potatoes or pasta to make it a dish on it's own rather than a side dish. 

It's a great way to add more vegetables and has a really fresh flavour. I use a bottled salad dressing but you could make your own with vinegar and oil if you prefer. 


Cowboy caviar


1 tin mixed beans in brine (drained) 

1 large can sweetcorn (drained) 

1 red pepper (chopped)

1 green pepper (chopped) 

1 red onion (chopped) 

bunch of coriander (if liked and chopped) 

200ml French dressing (or any dressing you like) 

salt and pepper


Simply mix everything together apart from the salt and pepper (add them at the end and taste again before serving.)

Leave it in the fridge for a couple of hours for the flavours to develop then taste in case needs more seasoning.
