Chinese Lettuce wraps
One thing I always fancy is Chinese food and although I have posted a few recipes for Chinese meals on this blog this was one of those recipes where I looked at loads of recipes online then made up my own which would be slimming world friendly and extra tasty.
If you like it spicy feel free to add some chili flakes or chopped up fresh chili.
Asian lettuce wraps
1 pack of extra lean turkey mince
1 red pepper (diced small)
3 spring onions (sliced)
2 tsp light soy sauce
1 tsp fish sauce (you can leave this out if you don't have it )
garlic and ginger paste (I use frozen easy to use defrost first)
OR clove of garlic crushed and 2 tsp fresh grated ginger)
low calorie spray oil
Spray a large frying pan with the spray oil and then fry the mince breaking it up into small pieces until cooked through , Add the garlic, ginger, red pepper and spring onions and cook for a few minutes .
Add the soy sauce and fish sauce (if using) and stir well keep cooking until all the liquid is absorbed.
Pull the leaves off either iceberg or baby gem lettuce (washed and dried) and spoon in the filling.
To make it a full meal I'd serve with either noodles or maybe egg fried rice and some stir fried vegetables.
I also like to add chopped up water chestnuts and mushrooms sometimes. If you leave out the fish sauce and use mushrooms its a really good vegetarian option.
