Turkey, vegetable and orzo soup
This is a really easy and tasty soup to make. It's really thick and filling almost a stew really and it takes just a minutes to make. I made a HUGE pan of this as my son and I have been taking it for lunches in work but I'll put the recipe for half quantities unless you want loads then just double it. (Hope that makes sense!!)
If you haven't used orzo before give it a try it's just a rice shaped pasta and helps to make this soup thick and filling and is available in all large supermarkets. I used pre chopped fresh vegetables from the vegetable section of my local supermarket as it was only £1 for the bag or they do a frozen one but of course if you want to chop all the vegetables yourself then feel free.
Turkey, vegetable and orzo soup
250g turkey mince (less than 5% fat)
500g vegetable soup mix of fresh chopped vegetables (carrot, onion, potato)
2 chicken stockpots or stock cubes
125g orzo
low calorie spray oil
salt and pepper
Spray a large saucepan with the spray oil and over a medium heat fry the mince breaking it up as you go until it's cooked through and slightly browned.
Add the vegetables, stock pots and 2 pints of water. Bring to the boil then add the orzo and boil for another 15 minutes stirring occasionally. You might need to add more water if it's too thick.
Taste to see if it needs salt and pepper and then serve.
