Rich onion gravy (Slimming World friendly)
This is a really simple gravy recipe and although not syn free it's very low only about 1/4 syn per portion. I used beef stockpots for this but of course you can vary it with either vegetable or chicken for whatever you are serving.

Rich onion gravy
1 large onion (finely chopped)
2 beef stockpots
1 pint boiling water
1 tbsp cornflour
low calorie spray oil
salt and pepper
Spray a medium size saucepan with the spray oil and add the chopped onion. Fry gently over a medium heat for 5-10 minutes until the onion is soft and just beginning to colour.
Make up a pint of beef stock with the pint of boiling water and the two stockpots and add to the pan. Using a hand blender blitz the mixture till smooth or you can leave it with the onion bits in if you prefer.
Mix the cornflour with a little cold water then add to the saucepan and whisk very well until boiling again and starting to thicken whisking all the time.
Taste for seasoning you might need a little salt and pepper.
Serves 4 at 1/4 syn per portion.
