Asian style salmon and noodles (Slimming World friendly)





My daughter (Hi Gina!!) has recently moved into a lovely flat in Manchester and almost opposite is a huge Chinese supermarket so when I visit I always stock up on big bottles of soy sauce, spices and noodles. I love noodles and this recipe is really tasty and easy to make. You need to prep this a few hours before by putting the salmon in the marinade but you could do this in the morning and cook it after work. You can also prep the noodles the same time as you add them cold.

This is also economical as you only use two salmon fillets but it easily feeds four people, I used bok choy the Chinese vegetable as I had that in from shopping but you could use beansprouts, broccoli or even just a pack of pre prepared stir fry vegetables. 


Asian style salmon and noodles


Marinade

1 tbsp lime juice
3 tbsp dark soy sauce
2 cloves garlic (crushed)
thumb size piece fresh ginger (peeled and grated or from a jar)


Rest of ingredients

2 large salmon fillets
3 slabs of dried egg noodles (cooked as instructions then drained and rinsed in cold water and drained)
3-4 bunches bok choy (or vegetables of choice see notes above)
1 large onion (sliced)
3 tbsp dark soy sauce
low calorie spray oil


Mix all the marinade ingredients together in a non metallic dish and lay the salmon fillets flesh side down in the marinade, Cover the dish and leave to marinate for at least a few hours.

When ready to cook, Take the salmon out of the marinade and pat dry, Spray a frying pan with the spray oil and heat the pan, add the salmon fillets skin side down and fry for about 3-5 minutes each side depending how thick the fillets are until just cooked. Take out of the pan and put to one side to rest for a few minutes then remove the skin and break into pieces.

Take a wok or large frying pan and spray with oil and place over a high heat, Add the onion and vegetables and stir fry for five minutes keeping it moving all the time until the vegetables have started to wilt.

Add the cooked, cold noodles and keep stir frying moving everything all the time I often use tongs to do this as it helps to move the noodles around. Once everything is hot add the soy sauce and stir fry for another minute or two then add the salmon and gently mix everything together.
